  2. [Prep] Mash the banana with a masher or fork.
  3. Add the warmed margarine to the soft brown sugar and mix until the mixture turns white.
  4. Add the eggs one at a time and mix well after each addition.
  5. Add the sifted dry ingredients to the mixture and mix until there are no lumps.
  6. This is how it should look when you finish mixing.
  7. Add the banana from Step 2 and mix well again. There should be a few small lumps left.
  8. Pour into the muffin or paper cups and bake for 15 minutes in a preheated oven.
  9. I baked these in brioche moulds and topped them with chocolate. They look really cute and makes good presents.
  10. Ready to serve and ENJOY!

I add chocolate chips to my batter and triple the recipe. Place cupcake liners in a muffin tin. In a medium bowl mash the bananas with a fork, leaving them slightly lumpy, and set aside. In a large bowl stir together the butter and sugar. Mix in the eggs and vanilla and stir until smooth.
