- Preheat the oven at 165 degrees celcius for 10 mins.
- To make buttermilk, in a bowl add lukewarm milk and vinegar or lemon juice, stir and keep it aside for 10 minutes.
- In a bowl add brown sugar, mixed spice, cinnamon powder, ginger powder, cocoa powder, melted butter, vanilla essence, honey and buttermilk. Mix well till everything is well combined.
- In another large bowl sift together wheat flour and baking soda and mix. To it add tutty fruity, raisins, black currant and fold in all the dry fruits till they are properly coated with flour.
- Add all the wet ingredients in the dry ingredients and gently mix them.Do not over mix.
- Pour the batter in a greased and lined loaf baking tin and smooth the top with the back of a spoon. Tap it couple of times to remove bubbles.
- Place the cake tin it in middle rack of the oven and bake for 60 minutes at 160 C or until a toothpick inserted in the center comes out clean. If the top of the cake browns too much then cover it with an aluminium foil.
- Remove it from oven and let it cool or else cook it some more time. Slice it and you can store it for a week in refrigerator.
- Ready to serve and ENJOY!
