Steps to make Strawberries & Cream Cake 🍰:
- Begin by preheating your oven to 180 (fan). Add all of the dry ingredients for the batter into a large bowl and combine.
- Next make a well in the centre and add in all the wet ingredients. Mix together really well until a very smooth and glossy batter is created. Grease your cake tin well with either butter or spray oil. Pour in the batter and smooth up to the edges neatly.
- Bake at the centre of the oven for 15-20 minutes until risen, golden and a toothpick comes out clean from the middle. Once cool enough to handle, turn it out upon a wire rack to cool completely before decorating. You must not decorate the cake whilst still warm, otherwise the decorations will slide off and melt!
- To decorate, smooth strawberry yogurt neatly over the top in a layer around 2-3mm thick, don't take it too near the edges as you don't want it dripping down the sides too much.
- Fan out the sliced strawberries on top in a circular layered pattern then add some cream in 'roses' around the edge, dust over some icing sugar before serving. Finish with a few small fresh mint leaves to add a pop of colour and extra freshness and enjoy! :)
- Note: Leave in the fridge before serving, recommend not adding the cream and icing sugar/mint leaves until right before serving to your guests for a better appearance.
