  1. Sponge cake 1.Preheat the oven to 180 deg C for 10 mins. 2. Mix the milk+vinegar mixture & keep aside for 5 mins. 3.In a mixing bowl, add oil,sugar & beat until sugar combined. Sieve the dry ingredients into the wet mixture in batches & mix. 5.Divide & transfer cake batter to 8"& 5.5" cake tins. 6.Bake at 180 deg C in a preheated oven for 30-35 or until the toothpick inserted at the centre comes out clean.
  2. Raspberry extract Method: 1.In a pan, add chopped Raspberries,sugar & allow it to simmer on low flame for 20 mins until mushy. Then switch off & add lemon juice. 2. Cool completely & grind. 3. Strain the mixture to remove seeds.
  3. Frosting: 1. Beat the cream cheese & powdered sugar until soft peaks. Add food colour & raspberry extract & combine. 2. Fold the chilled whipped cream.
  4. ASSEMBLY: 1.Slice the 8 inch & 5.5 inch cakes into 3 each. 2. Make a hole in the centre of the topmost 5.5 inch slices to accommodate the doll. 3. Place a cake board. Place the first slice of 8 inch cake. Spread syrup.Spread frosting over the cake slice & then add raspberry extract over. Then place next cake slice & repeat for remaining 8 inch & 5.5 inch slices. Cover the cake completely with frosting.
  5. 4.Then poke the straws into 4 corners of the cake to give it the stability & avoid collapsing. Trim the straws according to the height. 5. Place the doll inside the hole. Make sure the cake is completely covered with frosting.Place the cake in the freezer for 30 mins. 6. Once the crumb coat is nicely set, start piping the top & bottom of the cake using star nozzle(big & small) 7.Decorate with edible pearls & sugar crystals.
