Steps to make Atta suji cake:
- Take curd & sugar in a bowl and mix it well till the sugar dissolve, then add jam into it and mix it. After that mix oil or ghee & mix it well
- In other bowl take wheat flour & semolina after sieving.
- Now add dry ingredients into wet ingredients little by little and mix it with cut & fold method. Mix lemon juice also at this stage.
- After that add milk gradually little by little and mix it until the batter comes in ribbon like consistency
- Batter is ready, now take the cooker and make a layer of salt into it & put a stand or any steal bowl (on which you can place your cake tin) and keep it on gas stove on low flame for preheating. Remove the whistle of cooker.
- Grease your cake tin or the utensil you are going to bake your cake by oil and dust it with wheat flour
- Now add Eno into the mixture and mix it well. Don't overmix after adding Eno. And don't put the batter on rest after adding Eno.
- After adding Eno pour the mixture into cake tin & put it inside the cooker on the stand or steal bowl you have kept in the cooker.
- After 35 mins check the cake with any knife or fork or toothpick by inseting knife inside the cake in center. If the knife comes clean out of the cake then your cake is ready but if it comes with little batter then keep it baking for 10 more minutes. after 10 minutes again check it & if cake is ready turn off the flame and remove the cake tin from cooker and keep it aside to cool down.
- After 15-20 minutes remove the cake from the cake tin. And keep it in the fridge till the cream is getting ready for frosting.
- Take a bowl filled with ice and put another bowl over the ice in which you will mix the cream. Now beat the cream by the help of whisk. after 5 minutes add 3-4 spoon powdered sugar in it and keep it mixing. Keep mixing in only 1 direction. If you have hand blender you can use that also for this step, as that will take less time.
- You have to mix or beat the cream until it gets soft peaks.
- When the cream is ready, grind 5-6 orange biscuits in mixer and mix the biscuit powder into the cream to get orange flavour.
- If your cream gets thicker after adding the biscuit powder then add 1 spoon milk in it and whisk it.
- Now take out the cake from the fridge and spread the cream all over on the cake and again keep the cake in fridge for 15 minutes. After 15 mins take out the cake and re-apply 1 more layer of cream on the cake.
- Now take 3-4 spoon of jam in a bowl and mix it with the help of spoon. By doing this the jam will become soft. Now put it in a clean empty milk packet or any plastic bag for making cone. Cut the end of the cone and draw any design of your choice by jam on the cake. I have drawn on sides of the cake & written name with it. You can add red a drop of food color also in jam to make it more attractive for decoration.
- Now crush the gems and make border on the cake with it. Apply other chocolates on the top of the cake like I have applied on my cake. You can see in picture.
