  4. Cutting chocolate finely, in the saucepan adding heavy cream, rum, honey turn on medium heat, waiting it until just start boiling turn off heat, pour into chocolate and whisk. When ganache reaches about 108F, put butter in mix. Pour into tart sheet, genlty tapping at bottom to remove bubble and put in the fridge 3hours.
  5. Soaked gelatin in cold water. Meanwhile in the saucepan boiling water and cream on medium heat, in mixing bowl mix sugar and cocoa powder, when cream starting sizzling take out and adding dry ingredients in and put on medium heat again and mix. When it'boiling turn off the heat, put gelatin in whisk until dissolve, then strain it. Gracage is poured when it reaches 90F. Put in fridge at leat 1hour
