- once baked, place another sheet of baking paper onto a surface. sprinkle the top with castor sugar. carefully lift the sponge out of he tray and place upside down on baking paper.
- cool completely and peel off top layer of paper
- spread on filling of choice. gently roll into swiss roll using the parchment underneath
