- Make ready 1 tbsp Blue citrus
- Prepare 2-3 tbsp Chopped cashewnuts
- Take For cake
- Make ready 1/2 cup maida/All-purpose flour
- Get 60 gm butter
- Make ready 200 gm Condensed milk
- Take 1 tsp Baking powder
- Make ready 1/2 tsp Baking soda
- Take 1/4 cup soda water
- Prepare as needed Foil paper and plastic container to set ice cream
Sicilian cassata ice cream, a very fresh gealto, greedy, with candied, pistachios, chocolate and a soft heart of sponge cake soaked by Alchermes. It's obviously perfect for summer, but also for a big holiday like Christmas, when an ice cream at the end of the meal pleases everyone. This is an exotic ice cream from India. Quite similar to the original Italian concept of cassata ice cream but just different recipe adapted to suit Indian tastebuds and preferences.
Instructions to make Cassata Ice cream:
- For Ice cream base:- boil milk take 1/4cup cold milk add corn flour GMS And (CMC powder need in summer) mix well and add in aboiled milk add sugar and stir cont. And again bring one boil. Now sim on flame and boil 7-8min. Last 1min stir on fast flame and turn off flame. Let it cool on room temp. 6-7hrs.
- Mean while Take maida baking powder and baking soda in a bowl and seive 3times. In another bowl beat condensed milk and room temp. butter mix and beat with beater till light and fluffy. And add dry ingredients. Mix well and add soda water slowly. Approx. 1/4cup. Mix properly. Dust the tin with butter and maida and pour cake batter.Tap 2-3times put in a preheat oven 180*for 20-25 min.
- Let it cool cake on room temp. And remove from tin. Cake is ready.
- Now take ice cream mixture in a bowl add 1/2cup milk powder and beat with elctronic beater. Divide in 2parts. Add strawberry crush and imulsion in one part and churn for 7-8min.with electronic beater. And set in a freezer for 10-12hrs. Strawberry ice cream is ready. In 2nd part add choppedOne beetel leaf. Gulkand and green food colour 5-7drops. And set in a freezer for 10-12hrs.
- For 3rd part plain vanilla add citrus blue crush and churn7-8min add milk powder beat 7-8min. set in a freezer same way.
- Now for chocolate ice cream when milk is hot add chocolate and melt stir let it cool and set in a freezer add milk powder and churn. Again set in a freezer. (For this 2icecream I have taken 500ml. Milk more and made base with same process.).
- Now take cake and slit divide in a 2parts. Take air tight plastic container arrange foil paper and set cake base. Take out chocolate ice cream and spread on a cake base. Cover the lid and set in a freezer for 1/2hr.
- Now spread pan ice cream on chocolate ice cream and again set in freezer for 1 hour. Make 3rd layer of strawberry ice cream same way and set in a freezer for 1 hour. Again last ice cream citrus blue spread like this way and set in a freezer for 12-15hrs.on high cooling temp.
- Take in a plate and make ice cream slice.spread chopped cashewnuts. Tasty yummy delicious protein rich Casata ice cream is ready to serve.
