It was a bit of a busy month for us and as I knew there were plenty of things that needed my attention this month I decided to tackle this month's Daring Bakers' challenge quite early in the month. Malai Cake is a soft & spongy cake soaked in sweetened milk. It is an Indo - western fusion dish. Western-style cake soaked in Indian sweetened milk, flavored with saffron, and garnished with chopped nuts, It is inspired by Ras Malai which is a traditional Indian sweet.
Steps to make Saffaron choco milk cake without cream:
- First of all prepare Saffaron rabdi for cake. Take 1/2 litre of milk in gas and stir it Coutinusly for 5-10 minutes. After boilng it 1/2 cup milk powder dissolve in water and mix into milk. Add some kesar strands in rabri.then add 3 tbsp sugar in rabri and stir it untill it dissolve. Add 1 pinch of baking soda in it. It gets creamy and thick consistency.
- For cake preparation sift all dry ingredients in bowl (maida milk powder baking powder baking soda in it)
- In another bowl take curd oil sugar and whisk it and add kesar strands which is dissolved in hot water. Add 2 tbsp malai in it. Add yellow food colour in it and whisk it untill it becomes creamy in texture.
- All wet ingredients mix into dry ingredients and add milk as per need (I used 1/2 cup milk) for cake consistency.
- Take a cake tin grease it with oil and dust with maida… No any butter paper required. Add cake batter into it and tap for removing air bubbles from the batter
- You can add dryfruits if you want. Preheat microwave before baking. In microwave bake it for 25 minutes in convection mode. You can bake this into kadai preheat kadai with salt add cake tin and cover it properly. In low flame bake it for 35-40 minutes. You can check it once.
- After cake Unmounding it looks so soft spongy. After cooling down cake is cut into 3 parts and pour kesar rabdi in it. And some chocolate crunch.You can use fork same process is repeted in all layers.
- Above garnishing is done by rabdi and chocolate syrup and some crushed chocolate biscuits. Enjoy cake and it's tooo yumm and delicious.
