- Take 1 tbsp poppy seeds
- Get 1 tbsp fennel seeds

- Prepare 1 inch cinnamon stick

To attain a creamy texture soak the almonds overnight and then grind all these ingredients into to a fine paste and keep aside. Bring milk to boil in a pan and add the saffron strands. Firstly, you need one sponge cake and some Rasmalai along with whipping cream. What makes my simple plain cake unique is the almond essence, Thandai powder, and nuts in it.
Instructions to make Thandai Malai Cake:
- To make Thandai powder:- Dry roast all dry fruits. Then dry roast all of all ingredients except saffron threads and dry rose petals. After cooling completely then grind all roasted ingredients together to make Thandai powder. You can Store it in a air tight container for 1 week
- Making Cake:- In a bowl mix warm milk and vinegar and keep it aside.
- Now in a mixing bowl add flour, powder sugar, baking powder, milk powder. Sieve the mixture. Making sure there are no lumps.
- Mix powder sugar in melted butter, then add milk in it mix it well.
- Now In a large bowl,mix all dry ingredients and required amount of mik.add vanilla essence mix well.then toss the dry nuts and mix gently till combined. Now cake batter is ready.
- Grease the baking mould and lined the mould with parchment paper. Pour the batter into baking mould.
- Now heat a heavy bottom pot put the cake mould on a stand Cover it and keep it on low flame for 30-35 minutes. Or until a toothpick inserted comes out clean. Switch off the flame and let it cool.
- Now make Thandai Malai:- In a heavy bottom pot add 2 cups of milk and bring to boil. Add condensed milk and mix it well.
- Add thandai powder, chopped dein nuts cardamom powder, and saffron soaked milk. Mix everything well. Reduce the milk upto 40%-50/%. Switch off the flame and keep it aside for cool completely.
- Now pour prepared thandai Malai over the cake. Before pouring prick the cake with fork then the malai will get easily into the cake.
- Garnish it with chopped almonds pistachio cashew nuts, saffron threads and dry rose petals. Refrigerate it for 1 hrs.
- The soft spongey thandai Malai Cake is ready. After that cut into pieces and pour some malai over it and serve it chilled.
