Chicken à la King is one of my favorite classic comfort foods. This recipe is easy to adapt–you can make it thicker or thinner by changing the amount of roux and having a little extra stock on hand. Usually I make this with leftovers from a large roasted chicken. Serve over pasta, toast, rice, or mashed potatoes.

Steps to make Chicken-a-la-King:
  1. In a pan on a medium heat, add butter and cook the onions until soft and translucent.
  2. Add chicken, chillies, spices and garlic. Cook till sealed.
  3. Add julienned pepper and sliced mushrooms and braise for about 5 minutes
  4. Mix the milk and cornstarch. Mix chicken stock powder and water. Then mix milk and water mixtures together.
  5. Add to pan, and simmer on low for 20-30min, stirring inbetween until thickened and creamy. Check seasoning.
  6. Serve with basmati rice/ on bruchetta/ on pastry shells or even with pasta. (If you'the like it creamier may add fresh cream.)
  7. Ready to serve and ENJOY!

Usually I make this with leftovers from a large roasted chicken. Serve over pasta, toast, rice, or mashed potatoes.
