  12. Prepare 250 g Frozen Cherries, defrosted & drained

  23. Make ready 50 g Unsalted Butter- melted
Steps to make #mystyle Cheesecake, Cherry ๐Ÿ’ Almond Crumble Cake- Traybake:
  1. Pre-heat oven 170ยฐFan. I usually put a pan of water on the bottom of the oven when pre-heating the oven. Grease & line a 13"x 9" rectangle baking tin, about 3" deep with baking paper. Let the baking paper overhang the sides.
  2. If using frozen cherries, defrost & drain but leave whole. If fresh cherries, pit them, quarter 50g, leave the rest whole.
  3. Mix flour, baking powder, baking soda & salt- dry whisk until nicely mixed.
  4. For the cake, using a handheld mixer, beat the flora buttery & golden caster sugar until fluffy & creamy.
  5. Beat in eggs one at a time, scrape the bowl between additions & beat well. Beat in the almond extract.
  6. Fold in the flour in 2 parts, alternating with the soured cream, then gently fold in 50g of the cherries. (Batter needs to be thick)
  7. Put into prepared tin, spread it out, tap on counter twice to level. Make the cheesecake layer.
  8. Beat the Creamcheese with the white sugar until smooth, mix in lemon juice & zest.
  9. Spread gently & evenly on to the cake layer, sprinkle on the rest of the cherries. Make the crumble topping.
  10. Melt the butter, don't let it get hot. Mix in the flour, sugar, almonds & cinnamon until just combined, keep it like crumbs.
  11. Using your fingers in a 'rubbing' gesture to sprinkle evenly on to the cherries, tap the tin once on the counter to settle everything.
  12. Bake for 35-45 minutes, depending on your oven as all ovens differ. Check with a sharp knife/skewer/cake tester after 35 minutes.
  13. When done remove tin to a wire rack, leave in tin 20mins, then use the overhang of parchment paper to help move the cake from the tin to the wire rack to cool completely.
  14. Can be drizzled with some glacรฉ icing if liked. Cut into 24 squares(approximately)
  15. Ready to serve and ENJOY!
