  17. Take Or strain some yogurt the night before (so you’re making labneh without the olive oil) and mix with a few drops of vanilla extract and a drizzle of honey/ maple syrup to taste (see recipe)

  4. Add the carrots, cranberries and walnuts to the wet mix.
  5. Combine the wet mix with the dry mix.
  6. Put the mix into the lined tray and bake until golden brown - about 30-35 mins.
  7. Leave to cool before adding the topping/ cutting. Enjoy 😋

I use cane sugar, but any granulated sugar can be used. If using turbinado sugar I suggest blending it to a powder for the best cake texture.
