- Get 4 egg white
- Take 4 cups powdered sugar / icing

- Take 1/2 cup butter
Italian Rainbow cookies, sometimes also called Venetians, Neapolitans, or Tri-color cookies, are gorgeous and loaded with flavor. Growing up, I don't remember making these cookies at home. They always came from a bakery. Once I learned how easy they are to make, they have become a must for my Christmas sweet table.
Steps to make Italian Rainbow Cookies:
- To start with the Ganeche, on a double boiler (low heat) add egg white, powdered sugar, cocoa, and milk and keep on whisking for couple of minutes until all incoperated and warm
- Off heat and add butter and whisk, cover with a kitchen wrap and allow to completely cool
- Then give it another 5 min whisk, cover with a kitchen wrap /cling film and refrigerate
- Mix the cake batter, I did mine separately using the above ingredients on each batter except the colors… Check any of my previous cake recipe to see the step by step method on how to mix cake batter. Note: in most IRC almond paste is used and almond extract… But in the absence of that I had peanut paste to have that nut taste… (see recipe)
- Preheat oven, I have separate 3 batters, The 1st no color (cream) added, the 2nd I added pink color while the 3rd green color..then put on parchment paper on a baking tray and spread your 1st batter
- Bake on medium heat for 10 minutes, insert a tooth pick when it comes out clean without batter you are good to go… But trust me 10-12 min is just enough if you don't want to over bake your cake๐. Do same with the pink and green…
- And we have tri colar cake…don't mind the cream color cake (middle), it's a bit under the weather ๐. Allow the cake to completely cool
- My Ganeche after chilling ๐ค
- Then we start coupling the sandwich…pink cake + spread Ganeche + cream color + Ganeche + green color + Ganeche + sprinkles
- Let it cool for couple of hours in the refrigerator
- After chilling the interesting part๐๐ป partition your sandwich and…….
- And…..
- Ready to serve and ENJOY!
