- Take Few tbsp of olive oil
Add Thai Sweet Chilli Sauce, Fish Sauce, tuna and all other ingredients (except oil). Heat oil on the barbecue or in a frying pan, cook fish cakes until golden. If desired serve with lemon wedges and mixed green salad leaves. Place fish, onions, sauce, paste, lime zest and juice and fish sauce into a food processor or blender.
Steps to make Sweet Chilli Fish Cakes:
- Boil the kettle, in a large bowl add the mash potato powder. Add the butter optional, pour in the water give it a good stir. Or place the mash or inside of a baked potato and give it a good stir!
- Chop the spring onion, add it to the bowl then open the tin of salmon add it too, with the sweetcorn, capers, sweet chilli sauce, herbs and salt and pepper! Mix it all up.
- Make the fish cakes into 4 equal patties. Spray with oil and put the bread crumbs in a bowl and roll them into the crumbs coating well.
- Pour a few tablespoons of oil in a frying pan and on a medium high heat fry each side until golden and cooked all the way through!! Enjoy
- Ready to serve and ENJOY!

Add your mash potato, drained fish, sweet chilli, chopped chives, spring onion and basil to a big bowl. Add the egg yolk, salt and pepper and mix well. Toss all the fish cakes in flour first and lay on the cling film.
