Steps to make Fruit and nut cake:
- Preheat the oven to 180°. Grease an 8" baking tin and set aside. Put a sauce pan into the fire in it put sugar, butter, dried fruits and the Orange juice. Stir nicely
- As it starts bubbling add all.your spices and stir. When it comes to a boil, reduce the heat to low & let it simmer for 5 min as you continue stirring
- After 5 min remove from the heat & let it cool completely to lukewarm.
- Meanwhile sieve the flour, baking powder and salt. Give it a quick whisk to make sure the ingredients are well mixed. Add the chopped nuts and mix completely.
- In a separate bowl, put the eggs add vanilla extract and whisk completely until fluffy
- Add the egg mixture into the nuts mixture and stir well.
- To the wet mixture add your flour in bits making sure you stir completely until you are done.
- Put your mixture into your greased baking tin. Bake for 40-45 min.
- Enjoy
