  10. dice up beef sausage to size of your liking smaller the better add to the same frying pan as butter frying pan
  11. mince up the yellow onion and add to same frying pan as sausage
  12. cook sausage and onions until sausage is crisp and onions are super tender
  13. once potatoes are done steaming remove from basket and into the same large mixing bowl
  14. now mash the potatoes until there are no more lumps u want smooth consistancy add milk and the colby jack cheese and mix well
  15. once sausage and onions are done mix well in with the potatoes. once mixing is complete place in freezer for 15-30 min untill mixure is cool all the way thru
  16. in a seperate bowl beat all 3 eggs for an egg wash
  17. in another bowl place bread crumbs in to coat cakes after the egg wash(experiment with different flavors of breadcrumbs mix and match)
  18. bring fryer oil up to temp of 350°F
  19. pull potatoe cake mixture out of freezer and weigh out 3.5 oz for each cake
  20. patty them up like a hamburger patty dip in egg wash and then coat with bread crumbs and set back in freezer for ten min
  21. pull potatoe cakes out of freezer and cook in fryer for 5 min or until desired crisped is reached
  22. place finished potatoe cake on paper towls to soak up grease
  23. serve right out off paper towels u can keep them warm by placeing them in the oven @ 200°F
  24. Ready to serve and ENJOY!
