Drop squash mixture by tablespoonsful into the hot oil. Cook to a golden brown, turning once. Drain on a rack over paper towels. Serve immediately–fritters are also good served at room temperature.

Instructions to make Squash Fritters:
  1. Cut the squash into small elongated pieces. About 1 inch long and 2-3 mm thickness.
  2. Put all the chopped onions, squash and garlic to a container. Add salt and pepper with the quantity depending on your preference. You may add little sesame oil to enhance taste.
  3. Mix the ingredients with your hands. Set aside for about 10-15 minutes to lock in flavors.
  4. Add the flour and egg to the preparation and make sure you have a "batter" like texture when preparing this. Add water if needed.
  5. Heat enough cooking oil in a frying pan for deep frying the fritters.
  6. Shape the mixture like a pancake and let it slide / drop into the cooking oil. Turn over to the other side if the bottom part is already golden brown and crispy.
  7. Remove from the frying fan if the fritters is already golden brown all through out. You may place it on top of a table tissue to remove excess oil.
  8. Enjoy.
  9. Ready to serve and ENJOY!

Drain on a rack over paper towels. Serve immediately–fritters are also good served at room temperature. Wash the squash then grate them on a box grater. Place the grated squash and onion in a mesh strainer and press to squeeze out some of the water. Place the squash and onion in a large bowl, then add the flour, egg, sugar, and salt and mix until combined.
