- Take samosa dough:
- Take 2 cup cake flour
- Prepare 2 tablespoon oil

- Make ready 1 teaspoon coriander seeds

- Make ready half teaspoon garam masala powder

- Take 2-3 large potato(boiled and mashed)
- Make ready chopped coriander
- Take half lemon
- Take oil for frying
Add in fresh coriander leaves and mix again. Add the remaining spices (coriander powder, ½ tsp salt, turmeric powder, red chilli powder, red chilli flakes). Add the chopped coriander leaves and green chillies. Take off the heat and add lemon juice.
Instructions to make Punjabi samosa(aaloo/potato samosa):
- Samosa dough: take a bowl add cake flour then add salt,carom seeds.mix it well.then add dry fenugreek leaves..if u don't want u can skip it.add oil.mix and rub till the flour resembles bread crumbs.then add water make dough.make dough hard then chapati's dough…
- Samosa filling::: take a pan,add cumin seeds,coriander seeds and fenugreek seeds.saute for 2 minute.be careful it don't burn.then add garlic and green chilli paste.mix it well.add turmeric powder,salt.mix it well.
- Then add mashed potato.mix in spices nicely.then cook for few minute.let it get cool.then add lemon juice,chopped coriander and garam masala.mix it well…
- Wrapping samosa:::: take a lamon size of dough roll it between ur palm..roll it into a circle or oval shape which is less than 1 mm thickness..cut into a half,pick the 1 half brush it with a little water along the strainght edges of pastry.
- Now take a one edges of straight side and place it on other side,make a cone so that it sealed..place 1 and half tablespoon filling in the cone,make sure the fill only 3/4 of the way.brush the inside unfilled dough with a little water and sealed it..
- Fry samosa low medium flame…it will take 20-25 minute…then serve with sauce or chutney.enjoy…
