Cheesecake is one of the most favored of current trending meals on earth. It is enjoyed by millions daily. It is simple, it is quick, it tastes delicious. They’re fine and they look fantastic. Cheesecake is something which I have loved my whole life.

The ingredients needed to make Cheesecake:
  1. Prepare 375 gr biscuits (Digestive or Oro Saiwa)

  13. Make ready 3/4 tbsp Flour

Add sour cream and vanilla; mix well. To make the crust: In a small bowl, mix the cracker crumbs with the melted butter and the sugar together until evenly moistened. For the crust: Melt the butter, covered in the microwave, in a medium microwave-safe bowl, or a saucepan. Beat cream cheese, then add sugar and beat: Cut the cream cheese into chunks and place in the bowl of an electric mixer fitted with the paddle attachment.

Steps to make Cheesecake:
  1. Blend the biscuits and stir in melted butter to form the base. Level it in a cake pan greased with butter or olive oil, press accurately and freeze for 30 mins minimum.
  2. Make the filling using an electric wip and wipping together the cheeses, the cream, lemon juice, sugar and vanilla extract. Ensure the filling is very smooth. Add flour slowly and keep on whipping until consistency is smooth again. Separately hand whip two full eggs and then incorporate.
  3. Once the filling is ready place it on the biscuit base and borders (I like biscuit-ey cheesecakes!) and level to the top. Place it in the fridge for minimum 4 hours to consolidate.
  4. Make the fruit gelatine by cooking red fruits (I used frozen) with lemon juice, maple syrup and gelatine powder or gelatine sheets previously soaked in water. Cook until it gets denser but don’t over cook it, it shouldn’t be too dense as it gets denser by cooling down. Let it cool down before covering the surface of the cake to form the top fruit layer.
  5. You can garnish the cake with fresh blueberries, strawberries, raspberries or any other. I suggest adding some sugar on the top and let it rest for another 4 hours in the fridge so it naturally ‘caramelise’ before serving.
  6. Ready to serve and ENJOY!
