- Take 1 cup biscuit crumbs
- Get 80 gm butter/ghee

- Make ready 1 bowl all mixed fruits(finely chopped)(Kiwi, papaya, pineapple, apple, pomegranate seeds,cherry)

In a large bowl, beat cream cheese, sugar and lemon juice until smooth. Gradually add cream; beat until stiff peaks form. A delightful favorite with everyone, especially appetizing during the summer months. Note - Frozen raspberries can also be used.

- First for making cheese cream…In a deep bottomed pan add milk and bring it to a boil…Add lemon juice and stir slowly until curdle.. Strain curdled milk and let it cool…Now add into a mixer jar and blend it along with 2 tbsp of sugar until creamy..Homemade cheese cream is ready..
- Now in a mixer jar add biscuits to make crumbs…Take out in a bowl and add butter/ghee..Mix nicely…Put this mixture into a greased spring form pan.(lock cake tin).. Spread and press with the back of the spoon…Keep aside to set.
- Now in a small bowl add 1/2 cup cold water and zee-lo tin.. Stir…and…Keep aside to set for 10 mins.
- Meanwhile prepare cheese cream mixture…In a bowl add prepared cheese cream, condensed milk, whipped cream….Beat for few minutes..Add any fruit of puree and mix well..
- Now in a zee-lo-tin mixture add 1/2 cup warm milk and stir till dissolved…And pour this mixture into the cheese cream bowl…And beat again for a min.
- Pour this cheese cream mixture in pan (over the crumbs layer)….And keep in refrigerator…For 2-3 hours or until set.
- In a bowl add all finely chopped fruits and mix…. Spread evenly over freezed cheese cake…and keep in refrigerator to set/chill…For half an hour…
- Remove gently from pan..
- Juicy mixed fruit cheese cake is ready…
- Ready to serve and ENJOY!
A delightful favorite with everyone, especially appetizing during the summer months. Note - Frozen raspberries can also be used. When thawed, drain some of liquid and use in the raspberry puree. The base cheesecake itself can be used as a No-Bake Vanilla Cheesecake, and you don't have to do anything different to get it this way.
