Add coffee powder to milk kept for cake. Mix the milk and vanilla extract to butter mix. Mix the dry ingredients from the first step. Melt the dark chocolate in microwave or indirect heating through water.
Steps to make Dark Chocolate Truffle cake (eggless):
- Preheat the oven at 180°C for 10 minutes. Sift all the dry ingredients 3-4 times. Keep them aside
- In a bowl take all the wet ingredients and heat on high for 1 minute in a microwave or heat it by double boiler method.
- Mix the dry ingredients to wet ingredients gradually in three parts.
- Don't over mix. The mixture should have a smooth texture and ribbon consistency while we try to drop with a spoon. Pour the mixture in greased and dusted round 6" cake tin.
- Bake the cake in the oven for 50 minutes or till the toothpick inserted comes out clean.
- For the chocolate ganache- Heat the fresh cream till bubbles are formed. Now add this heated cream to the bowl containing butter and chopped dark chocolate pieces.
- Cover it and keep it aside for 10 minutes. Now mix both of them properly and let the ganache come to room temperature then keep inside the fridge for 30 minutes to set.
- Cut the cake sponge into three parts. Place the first part on the cake board and soak with sugar syrup and apply a layer of ganache on it. Similarly, apply for the 2nd layer and finally the last layer also. Then cover the whole cake with ganache properly.
- Decorate the cake with remaining ganache as you like it and then decorate it with cherries and sliver balls. Tadda your dark chocolate truffle cake is ready!
