No fruit cake is complete without a little bit of whipped cream frosting. Since we are making a layered cake, we want the frosting to be stable so that it can hold the cake sponges and the fruit filling in place.

- In a mixing bowl take cream, milk powder and powdered sugar. Whisk these well.
- Sieve together maida, baking soda, baking powder and add to the cream mixture. Again whisk well. Then add vanilla essence and water. Whisk well. Add more water if required to get thick flowing consistency batter. (I required 3/4 cup of water).
- Transfer this batter to greased and dusted tin. Tap tin twice. Bake at 200 degrees for 30 to 35 mins. Temperature and time may change according to the oven. Let it cool down completely and unmould.
- Take whipping cream in a bowl and whip till stiff peak appears. Trim top of the cake to get flat top if needed. Cut cake in 2 layers. Place one layer on cake board. Evenly apply some mixed fruit crush on it and then apply whipped cream on it. Place the other cake layer on it. Now again evenly apply mixed fruit crush on upper layer and then evenly apply whipped cream on top and sides of the cake. Level up with the help of spatula. Keep the cake in refrigerator for half an hour.
- Meanwhile cut fruits of your choice for garnishing. I have used apple, kiwi, sweet lime and pomegranate. Apply some edible gel on apple slices. This will prevent apple slices from turning black and also it will give shining.
- Remove cake from refrigerator and and garnish with fresh fruits. Again keep cake in refrigerator for 15 mins.
