The ingredients needed to make Awesome Strawberry Cake:
  1. Prepare 1 box strawberry or white cake mix
  2. Take 2 pints fresh strawberries

For the frosting: In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. For frosting, in a small bowl, beat butter until creamy. Gradually beat in enough confectioners' sugar to reach desired consistency. Spread frosting between layers and over top and sides of cake.

Instructions to make Awesome Strawberry Cake:
  1. The night before or the morning of baking, slice 1 pint of strawberries. Sprinkle sugar over strawberries, cover and refrigerate. This will form a juice from the strawberries.
  2. Making the cake. Preheat oven as directed on box.
  3. Using the 2nd pint of strawberries, pull out 3-4 of the best looking strawberries. Clean, rinse and dice remaining strawberries.
  4. Mix cake as directed on the box and add the diced strawberries.
  5. Using 2 8-9 inch round cake pans, spray each with nonstick spray and add cake mix evenly.
  6. Bake cake as directed on box. Make sure to check the cakes with a toothpick to make sure they are done.
  7. Cool cakes on cooling racks until completely cool.
  8. If using heavy whipping cream, make as directed.
  9. When cakes are completely cooled, take one cake and place it on cake plate with bottom facing up (this makes for even top layer and helps to keep from cracking/breaking)
  10. Spread top of first layer with cool whip or the cream. Place all of the sliced strawberries from earlier all over the whip. Using a spoon, drizzle the juice on the strawberries. You will not use all, just use your judgement on how much to use. Sptead a thin layer of whipped cream over sliced strawberries.
  11. Place the 2nd cake with the top facing up onto the first layer. Spread cool whip or cream over top of cake.
  12. Using the 3 of the saved strawberries, rinse, cut off tops and slice in half lengthwise. Place each half around the top edges of cake.
  13. With remaining strawberry, I usually rinse and take the top off and place it in the center of the cake. Using the juice, spoon drizzle some over top of cake.
  14. Serve and refrigerate remaining.
  15. I just recently made this using a swiss chocolate cake mix. I also added bananas. If you want to try this, just add 2-3 sliced bananas onto the sliced strawberries in the center and spread cream over bananas. I also took another banana and made larger slices and alternated them with the halved strawberries on the top.
  16. Ready to serve and ENJOY!

In a separate medium bowl, whisk together the milk, strawberry reduction, strawberry emulsion, vanilla extract, lemon extract, lemon zest, lemon juice, and pink food coloring.
